My sleep pattern is currently f*cked so I spent the past couple hours making a nearly vegetarian cottage pie. Nearly cause I used beef stock but I expect I could use vegetable stock well enough.
Nice! I'm going to have to try that one. I like the lentil idea. I just made lentil soup the other night, and was trying to think of something to do with the leftovers. That would be perfect!
I do one sometimes that's (red) French onion soup based : Olive Oil, 4 Purple onions, 3 garlic cloves, generous pinch of thyme, 1/2 bottle of red wine, flour, veggie/mushroom stock... quartered portobello mushrooms, whole crimini/button mushrooms, carrots // topped with leek&potato mash.

I think pouring -either red or white- leftover French onion soup over sliced raw mushrooms layered a few inches over torn crusty bread, and then topping with a celeriac or leek mash??? Might. Just. Do. It. Yaaaaaaay Bearlinda! I've been failing at coming up with a sub for that one for years!
