Black beans, Red pepper, Corn, Avocado, Cilantro, Garlic, Lime, salt&pepper.
This is one of those things that’s great eaten by itself with a spoon (what I did), or tortilla chips, mixed into a salad, scattered across tacos/nachos or grilled chicken/fish, added to salsas, topping/garnish for chili or hoe cakes or polenta, all kinds of stuff. Roughly equal parts chopped to the same size for the first 5, to taste for the last 3. Although you almost can’t have too much lime juice to marinade in, it doesn’t need that much, either. Shrug. Throw it all together, let sit for a few hours to let the flavors marry (or say Phuket and eat from the bowl or ziplock bag), and... Voila!
