Celebrated with a big ol' salad bar, grilled zucchini, grilled asparagus, and sweet potato fries, with a cup of hot water and lemon wedges. lol Party animal, I tell ya'. Homey can't hang with the food-like substance induced hangovers these days, much less alcohol fueled ones. Still in awe that I've made it this far after all the stuff I used to consider to be a celebration, for sure. Hahahahaha! Whew!
Made some more juice pulp cookies, too. I'm thinking gluten-free vegan cookies might be my favorite experimentation arena, thus far, as far as sweet baked things go. Much less room for error than with things that must rise, slice well, and such.
These were made with oatmeal, chickpea flour, romaine/celery juice pulp, medjool dates, vanilla, coconut oil, maple syrup, a few drops of stevia, cinnamon, peanut butter, flax meal, water, hulled hemp hearts, dark chocolate morsels, and dairy free mini-chocolate chips (I'm sure I'm forgetting something). My taste buds sure did a happy dance while sampling. Must share or freeze some tomorrow so I don't get carried away and eat them all up.
