What Did You Eat And Drink Last?

Had a quart of lemon water upon rising, then some carrot and orange juice, along with some lilac water. Hydration is now the first item on my break-fast menu, until around lunch time or so.

I'll make a banana/kale/hemp heart smoothie or some frozen banana/nut butter/carob powder nice cream for a snack since it's so warm today.

Going to eventually dive into some leftovers. Salad, grilled mushroom cap "burgers" and onions, vegan scalloped potatoes (made with almond milk, smoked cashew cheese, and earth balance brand soy free buttery spread) and steamed peas.

Plan to fix a lentil dish of some sort for dinner and serve with sauteed spinach, Russian kale, and creasy greens with red onion and garlic.
 
Sounds like you have a lot of knowledge on Vegan cooking. Were you Vegan a long time now?

Thanks. I've learned the hard way by decades of eating and drinking all the products/chemicals/energies that were unknowingly, yet very consistently, working against me. lol For real. Making time to learn more about what all that stuff I enjoyed so much and felt so "hooked on" really is, how it arrives at my table, and how my body does or does not healthily recognize, process, and eliminate it truly was an eye opener, then learning more about the animal's journey is all it took to seal the deal. Life changing is an understatement.

I've been eating mostly whole food plant-based vegan options for a little over two years now, mainly out of desperation and after trying just about every other method of relief that exists for many physical and mental ailments through the years. An ER visit prompted the decision. With much trial and error in my learning, I've been able to make a vegan version of many of my old favorites and no longer feel like I'm missing out. I already enjoyed cooking, so that helped a lot.

Plus, being married to someone and providing meals for family who still enjoy and prefer many of the Standard American Diet foods heavily ridden with animal products and such, I've had to get really creative in the taste bud arena to get them to enjoy the vegan versions of those things as well.
 
Been sipping on lemon water and a yummy sun "tea" made with locally acquired yellow dock, red clover, stinging nettle, and lilac water.

Will soon be munching on a big bowl of sliced bananas and black grapes drizzled with lemon and lime juice.

Will later dive into a giant salad we made with local lettuce, local spinach, local kale, some purple cabbage, carrots, celery, red onion, green onion, cherry tomatoes, red and orange bell pepper, topped with chick peas, hemp hearts, and some papaya poppy seed dressing, seasoned with some oregano, dulse flakes, and white pepper.

Dinner will likely be a buffet of leftovers.

Salad - avocado, sliced tomato, cucumber, baby spinach, red onion, red Grapes, balsamic dressing
Pud - banana & satsuma
Drank sparkling water

Spicy chicken cutlet curry and green salad with water.
Katsu?

Steak & Green NoEgg Omelette
(mushroom, onion, peppers, fire roasted tomatoes, spinach)

LOL. If no one eats my leftovers Imma be eating steak for days.

* To make a Green NoEgg Omelette? Ring a non-stick omelette sized pan few times with olive oil. Wilt a giant heaping mound of spinach -without stirring- down to about 1/2 cm thick, on Medium Low heat with the lid on. While this is happening? Zap or stir fry your precooked stuffings so they're nice & hot. Once spinach is flat? Crank the heat up to high to "set" it, with the lid off, & get rid of any extra moisture. Season the bejeesus out if it (because spinach is really bland) right before you're about to serve it, add your toppings on half the faux-omelette, and flip the other half over the top, and slide onto a plate. The spinach actually maintains the shape, but it all nice and moist. Which is a cool trick. And about 1,000 times easier than making "foam" that a lot of vegan recipes use. Voila.
 
Pound cake, with sliced strawberries, hot fudge and whipped cream. OMG!!!!! It was delightful!!!! Calorie laden, and will likely push my cholesterol to the max. But honestly, it was worth every last taste!!!!! Would have posted an image, but Anthony has disabled that for now!!!!!
