I love barley 🙂

Beef barely stew is my fave food, full stop. Well. Neck & neck with sushi. Which has 1,000 options. But even barley all on its lonesome is top 10. An amazing grain.

Another good one is is wheat. I know, sounds weird, given it’s prevelance… but? Bulgar wheat, boiled, with some olive oil & onion & stock (chicken or veggie)? Swoon. Amaaaaazing side. Decent whole.
Been eating black naked barley recently, or naked barley, and other grains like farro etc but barley is my fav. As the wholegrain it's so nutty and chewy. And flaked makes for a much healthier replacement for oats, which I love too, but the barley flakes barely affect my blood sugar in comparison to oats. Anyways yeah, love barley.

Easiest recipe ever...(The French may not agree with my very rudimentary take on a compote, but heck, it tastes good)

6/8 stems of fresh forced rhubarb
Tablespoon of sugar
1/2 a cup of water
Lemon, juice and peel

Stick it all in a pan and let it simmer for 20 mins ish until it's a lovely sticky mess. Fish out the peel. Stick blend it. Try not to cover the walls in it's bright pink goodness. Taste and add more sugar if needed. Job done
