I had a heavenly salad. *satisfied*
It was greens and herbs from my space station LED-light indoor garden: mustard greens, spinach, cilantro, basil, and marjoram mixed with the last bits of green leaf lettuce (those small crispy core pieces). The mustard greens are mellow and tender from not being exposed to the heat and outdoor conditions.
On top of that bed I put shallot slices, cucumber pieces and shredded carrot, topped with slices of cold roast lamb, which had been roasted with orange peels, rosemary, and garlic.
The dressing was a blend of my honey mustard lemon dressing (am cutting out vinegar as it flares my histamines which causes hives) with pesto a friend had made with my basil, and because I am cutting out aged cheeses (same reason as the vinegar) she replaced the Parmesan with nutritional yeast, except she accidentally got barbecue flavor, so it has a smoky flavor.
Ate with Wasa rye crisp bread, which I think is also called fitness bread in Germany? It’s sort of bland but very crispy crackers that I think pair well with salad.
