Tried something new tonight.....definitely a do-over.....eggplant "burgers" made with roasted eggplant/red onion/red and yellow bell peppers, mixed with black beans, hemp seed, cumin, cayenne, dulse granules, and black pepper in a food processor....then formed into patties and baked...served on my homemade celery/romaine/onion/rosemary/thyme/sage flatbread with lettuce, tomato, red onion, veganaise, and spicy brown mustard, with steamed peas.
Oops....forgot about the almond flour I added to hold it all together.
