Had a clean out the fridge curry soup last night with purple cabbage, celery, carrots, potato, green peas, cannellini beans, and sweet onion served with a side salad of spinach, romaine, red onion, tomato, bell pepper, and cucumber topped with a small scoop of eggless egg salad made with chickpeas and Indian black salt (that really isn't black) that brings out the egg-ish flavor.
Sipping on lemon water along with some ginger root/dandelion leaf/red clover herbal infusion this morning. Planning on beet/apple/ginger/aloe juice next, an eggless egg salad topped salad for lunch, and crock pot vegan chili for dinner.
