What Did You Eat And Drink Last?

Last night, we had a big pan of fried red potatoes, sweet onion, red bell pepper, and mushrooms with leftover corn bread, green beans, and pinto beans.

Doing my usual daily hydration routine this morning with lemon water and herbal infusions. Break-fast will be cara cara oranges and red grapes, and lunch will likely be some banana/blueberry/flax/chia seed vegan pancakes.
 
i had one of my homemade burritos. tortilla with 1/2 lb ground beef and a bit of tillamook cheddar. Lots of different finely chopped peppers, onions and taco/burrito seasonings in the beef topped with lots of cholula hot sauce. I make 30 a month all at once so that I can have a quick hot meal that I made whenever. I figure 400cal ea.
 
@Bearlinda it works really well for me. I just wrap freeze and thaw on demand. I can have a hot meal in 2 min in the microwave, longer if I cook one side in covered pan with a tiny bit of butter steaming the other side. But like you said you need to get a good bunch of energy to make such a quantity. I make the filling one day and the next day or so, mix with cheese and roll burritos. I always have several meals worth of leftover meat that I use for tacos that I freeze with the foodsaver.
