Another one, that I used to do when I was cooking for lots of people (esp kids, who all wanted something different) are crustless “Giant muffin tin quiches”. Put whatever meats/veggies/cheeses you like in the nonstick tins, then pour over the egg & cream mix, and bake off in the oven.

This reminded me, because I used less of a custard quiche ratio of egg to cream, and more a frittata ratio.

A very slight variation on theme is to use a thinly sliced ham, jambon, or prosciutto to make the “crust”, by lining the cups first, cooking for a minute or three to crisp them just a bit (or if using bacon or pancetta, maybe 10 minutes) then everyone adds their individual veg & cheese choices to their cups, and pouring over the quiche mixture. You can just crack whole eggs into the meat cups, too, but I found this needlessly fussy for everyday. Pretty, though, for breakfast company. But I still strongly prefer individual quiches or frittatas for both the home team & friends over.

Gumbo cooking, and I’m snitching bites along the way.

I forgot to eat yesterday >.< Well, less forgot, more spent too much time at too many markets. Kind of like working in restaurants, if I’m up to my eyeballs or elbows in food, it’s hard to convince my brain I’m not on a see-food diet :P So having a nice big pot of gumbo & rice will be a goodness.

Usually just point at stuff in restaurants, along with: That thing. You know. That I had the last time. Like that so and so clothed guy that grumbled at you. Yeah, THAT food. Thanks.)
 
Birds eye frozen spaghetti bolognaise & a rhubarb & ginger gin & Tonic.

The frozen Spag bol is rubbish but I like this particular rubbish.

The G&T is delicious but too sweet.

I like the idea of individal frittatas ~ as I limit the dairy I eat I guess non dairy milks would work ok? The one I made had no milk or cream in the recipe.
