What Did You Eat And Drink Last?

I just ate something so good and amazing and easy to make, I have to share! It is called "Crunchy Mung Bean Snack". Apparently it is a popular Thai street food. You soak about half a cup of mung beans for at least an hour. Then you drain and spread them out on a towel to air dry for about 15 minutes. Then you heat about a quarter cup of oil in a skillet and fry them for about 5 minutes on medium to medium-high, until most of them are brown. Then you remove from the oil and toss with salt, chile, and minced green onions. I put them on a paper towel on a plate and oh-my-gosh they taste like crunchy potato skins with a slight hint of sweet peas. I did not expect to eat the whole thing but I did.
