What Did You Eat And Drink Last?

After 3ish years of trying your therapist's suggestion out, albeit to the extreme, @MrMoonlight , I have to wholeheartedly agree. I remain in awe and super grateful for the discoveries and chance to live it to the extent I'm able.

I made some apple/ginger juice pulp cookies with cinnamon and vanilla the other day, but forgot to sweeten them (with dates) as I was combining ingredients, so I later whipped up some vegan cream cheese icing to sweeten things up....but had too many cookies, not enough icing....so for the last few cookies, I split them in half, spread sunflower seed butter on the top, then dipped it in maple syrup as I was eating them. Yum!
 
Sounds like a great plan, @MrMoonlight . Add your own personal flair/tastes/etc. and make it as fun and pleasant as you can so it's something you actually to look forward to rather than dread. That helps my mindset so much. I now try to always think of what I can add to enrich my life rather than focusing on what I feel like I'll be missing out on, much unlike when I first dove into the drastic changes. Then making time to actually learn of the specific enrichment potential and how my body processes it, etc. added a new level of wanting to try more stuff, especially in the herb arena, a.k.a. invasive weeds that most see as a nuisance, yet grow freely under foot each year.

Initially, I couldn't stop thinking I was simply going to die of either starvation or boredom, and almost had myself convinced to give up several times, and then positive changes became more obvious and kept increasing, and my curiosity kept growing from there. I was also convinced I could never afford the fancy gadgets I'd seen others use that seemed to make things easier and more conveneient, like a juicer, a food processor, high-speed blender, yonanas nice cream machine, etc., but ended up finding them all at thrift shops/consignment stores/and/or on craigslist. Wishing you many tasty and healthy discoveries in your pursuits!

This morning, I've consumed a couple quarts of lemon H20 and a pint of freshly made celery/radish/radish greens/spinach/ginger/jalapeno/red clover/carrot juice, with some more H20 to follow. Cheers!
 
Thank so much @Tornadic Thoughts for sharing that with me. I didn't even think about juicing or high speed blending. That could be a good way to add healthy living nutrition into my life. Those things are tremendously expensive, great tip looking on the secondary market. So now I need a heavy bag and a juicer. I'l get them at some point.

I had an english muffin and coffee w/ water.
 
Went on a spontaneous date with the hubby last night to hear his brother's band and had a veggie fajita with corn instead of flour tortillas, black beans instead of re-fried beans, and guacamole in place of the cheese and sour cream...with a cup of hot water and lemon wedges. Then stopped on the way home and got some coconut milk/mint chocolate chip nice cream. :)

Currently partaking in my usual morning hydration routine with H20, fresh juice, and herbal infusion. Have a big garden salad already prepped, herbed veganaise (vegan mayo with some freshly picked/chopped basil added), some sprouted grains bread, and some of the season's first tomatoes ready for today's menu. YUM! Are we there yet? lol Heading to the farmers' market eventually to snatch some more locally grown shiitakes for some pulled shiitake bbq.
