What Did You Eat And Drink Last?

Overdid it last night and today, so I feel ya', @berlinda . Would that be considered over-coping? Hmmm... Whatever it is, my body is protesting and hoping for a more mindful day tomorrow. Cheers to more balance and a new day.

I bought some So Delicious brand coconut milk salted caramel mousse and ate the whole pint last night after a pretty heavy supper, rather than 1/3 which is a serving, even after telling the hubby it tasted sickening sweet after not having any store bought nice cream for so long. Did I let that, or the ingredient list with mystery "natural flavors", etc. deter me? Hell to the nope.

Today, I started out with good intentions and had my usual water and a greens-filled smoothie, but then I dove into the leftover buckwheat/sweet potato noodles smothered in a vegan cheesey marinara sauce, then I had some herb roasted potatoes, then I ate a big ass bowl of all the vegan/g/f goods from that new build a bowl restaurant for supper, again, with even more taters on the side. Currently feeling heavy, yucky, inflamed, and ashamed. Blah.

We went to dinner last night at our favorite restaurant. He had Tuscan chicken fettuccine and I had a "pile of pan fried perch" with french fries, creamy tomato basil soup and they serve the best bread fresh from the oven. White Zin. So good!!

Chicken sandwich for lunch today. Mt. Dew.

For dinner I'm making J's favorite. Babybacks low and slow in the oven, fried taters with onion and garlic and a garden salad.

Having a Budweiser now. Cheers!

No Bull brand savory mushroom veggie burgers topped w/ red onion/spinach/spicy brown mustard/veganaise/ketchup, served with baked butternut squash fries seasoned with rosemary/sage/thyme/garlic.

Then we tried out a new dessert recipe that was easy to make and, amazingly enough, didn't try my patience while making it called self-saucing banana pudding cake, topped with almond milk vanilla bean nice cream. Although not the wisest move on our part, we both went back for seconds.

Here's the recipe: Self-Saucing Banana Pudding - Full of Plants
