What Did You Eat And Drink Last?

Baby greens, purple cabbage, yellow bell pepper, red onion, green onion, celery, and carrots topped with quinoa, roasted sweet potato chunks, black beans, pumpkin seeds, and baked chickpea/flax seed nuggets (seasoned very similarly to the typical chicken nuggets) topped with maple mustard dressing.

Currently sipping on a red clover/stinging nettle night cap.

For the record I’m rather alarmed my wok still “works”. Yes, the handle is a bit loose, but come to find? Cast iron is freaking sturdy. (Although I have seen it shatter... tub through the ceiling) But? I reeeeeally beat the hell out of my stove at one point... to. no. noticeable. effect. I will keep that wok until judgement day -or wanderlust strikes- just because I am soooo damn impressed with the sucker!

And I ate Eugh. As in protein shake, smoothie, and veggie mix = eugh.

But aside of Eugh I also had coke that was yum. :happy:
 
A clean out the fridge and use your imagination baked stack that surpassed my expectations.

It consisted of g/f almond flour tortillas and a mixture of sauteed (in water) red bell peppers/onions/carrots with added meatless crumbles, black beans, tomato, corn, brown rice, cilantro, lime, garlic, cayenne, my blend of taco seasoning, and homemade grated vegan cheese layered in between each tortilla and baked at 400 degrees for about 40 minutes, then topped with homemade salsa right before we ate it. A definite do over at some point.

Now I'm sipping on peppermint/stinging nettle tea for a night cap.
 
@Tornadic Thoughts - I love a good kitchen sink meal. ? Working through that now as I prepare to move at some point. Last night I grated and sauteed zucchini, added garlic and onion powder and some pepper, and then added a bit of basil tomato sauce and cheese. I also had leftover egg noodles and some rosemary/garlic lemon chicken, so threw those together with a bit of butter, more lemon and a touch of seasoned salt. Voila! Dinner with a glass of iced tea.

Today, back to boring.... greek yogurt and blueberries with 2 cups of English Breakfast tea.
 
The usual quart or so of morning H2O, and I've got the super-sized smoothie scene happening today. Made enough for break-fast and for my adventures out and about so I won't be tempted to buy "convenient" stuff in my travels.

I used my favorite combo that consists of baby spinach/kale, burro bananas, sunflower seed butter, cacao, carob powder, reishi mushroom powder, other various greens powders, and flax milk. It's really bright green today, as I added more fresh greens than usual, but tastes just like a chocolate banana milkshake. Mmmm...

Also gonna take along some celery and carrot sticks with some mango/sriracha hummus, in case I'm gone longer than I anticipate.
