Made the most amazing potato salad I've ever had. Sort of based on this southern German potato salad, but different because I'd already put the potatoes in the oven to bake, thinking I wanted to make potato salad with baked potatoes, and not with mayo.
Baked vivaldi potatoes with a little oil rubbed on em, and cayenne pepper.
Then more or less followed the recipe above, kept the skins on, and used around 1/3 the vinegar. So delicious!
Ate em with a bratwurst and savoy cabbage stir fried with garlic n fennel seeds so pleased it came out good.
