Hey, just bought some zucchini and summer squash earlier this week at the vege market. I like to sauté them up with some onion and garlic, add tomatoes and mixed Italian herbs, and I'm good to go. Now, I just need pasta to serve all of that goodness over that doesn't blow me up like a birthday balloon! I'll check at Aldi.

I made cucumber slices last night for dipping into a little ranch dressing and hummus. Making salsa this weekend and can't wait. I love tomatoes! Maybe some dill potato salad as well. Yes, I went a little crazy at the vege market. ;) I seriously need a tribe to cook for! :p

I can't remember if you're vegan or not. If not? Turkey Zucchini Burgers :inlove: They're an Israeli thing, like fat sliders or flat meatballs. Roughly chicken McNugget sized! Keeps great in the fridge for snacking, or a few tucked in a bento style lunch, with flatbread, salad, etc. I keep trying to freeze them to see how they hold up, but have yet to manage it / they all get eaten too fast.

1 lb / 500 g ground turkey 1 large zucchini, coarsely grated (scant 2 cups / 200 g in total) 3 green onions, thinly sliced 1 large free- range egg 2 tbsp chopped mint 2 tbsp chopped cilantro 2 cloves garlic, crushed 1 tsp ground cumin 1 tsp salt ½ tsp freshly ground black pepper ½ tsp cayenne pepper about 6½ tbsp / 100 ml of sunflower oil, for searing

Oven 425 // 220
In a large bowl, combine all the ingredients for the meatballs except the sunflower oil. Mix with your hands and then shape into about 18 burgers, each weighing about 1½ oz / 45 g. Pour enough sunflower oil into a large frying pan to form a layer about 1 / 16 inch / 2 mm thick on the pan bottom. Heat over medium heat until hot, then sear the meatballs in batches on all sides. Cook each batch for about 4 minutes, adding oil as needed, until golden brown. Carefully transfer the seared meatballs to a baking sheet lined with waxed paper and place in the oven for 5 to 7 minutes, or until just cooked through. Serve warm or at room temperature, with the sauce* spooned over or on the side.

* Optional; Sour cream or Greek yogurt + 1 small garlic clove crushed + 1TB each sumac, lemon zest, lemon juice, olive oil + pinch salt & pepper
 
Scampi Fries

So, I Googled this and still don't know what it is. I take it that it's a crispy treat, but what is the "scampi" flavor like? I thought maybe fish, but we have a dish here called shrimp scampi so I thought it might be a seasoning? Just curious. I'm learning so much though this thread - thanks for starting it! :bookworm:

Oh, and I bought 3 huge, ripe tomatoes earlier this week. So yummy! Making salsa out of the roma tomatoes today with lots of cilantro, salt and lime juice.
 
@VioletButterfly I'm enjoying seeing what everyone else has too, googling things I don't know :-)

Real "scampi" is langoustines or similar ie very small lobsters or very large prawns but the flavour of lobster rather than Prawn. Then they are coated in breadcrumbs and deep fried and served with lemon juice and tartare sauce. They are food of the gods to me even though they are ordinarily served in pubs or fish and chip shops ~ ie not exactly posh grub.

Scampi Fries are a pub snack which taste kind of like the Crispy coating on Scampi. They are very Crispy and tangy and I love em. Developed a taste for them when I worked in pubs. Quite bad for you I'm sure ;)

Had a banana and some more of those Tomatoes while prepping stew. Quite hungry now but stew won't be ready for hours.
