...because what I reeeeeeeally wanted was egg rolls / spring rolls (OMFG, I miss Chinese takeout), but we work with what we’ve got! LOL. Kind of like an inside out egg roll, carbs inside, protein outside, but hey. Weird, but worked.

The inside parts of the chicken (along with the fat rendered from the crisped skins) are going towards lemon chicken fricassee & tandoori chicken tikka.
