Cacio e pepe goes well with virtually any protein… as long as you aren’t mixing it into the pasta, but are serving in courses (Roma) or alongside (American).Tried making cacio e pepe with mixed steamed veggies and I think it turned out pretty okay. To feed the family I really need to find a good meat to go with it and can’t decide what will go well. Probably could do basic chicken breast but that feels kind of boring.

When I’m jus feeding myself I usually just eat one or two courses, when I’m feeding everyone (stateside) I kind of blend the two (*three!) cultures and put 5 or 7 or 9 (if we’re including booze & coffee) courses on the table

- Antipasti : cured meats, pickled veg, bruschetta, olives ((omfg, warm olives! swoon. It’s annoying to do, (unless it’s just me & a microwave, rather than chafing dish & tea candles) so I rarely do it, but I do love it))
^^^ Unless it’s a party? I usually either skip antipasti altogether, or we have antipasti and cheese&fruit FOR dinner!
- Primi : Pasta, rice, polenta, legumes, or soup.
- Secundi : Meat
- Contorini : Veg
Secundi & Contorini are served at the same time on different plates
- Insalata : Salad
- Formaggi e Fruitta : Cheese & Fruit
- Dolce : Desert
(Digestiv : Booze.)
^^^ Not so different from the meat & 2 veg (Brit), if often quite different from the meat & potatoes & maybe veg (US) …but… I adore the freedom of 1) not having to have everything “match” like I do when cooking Americana, & the ease of cheese/fruit & salad (no thinking required!).
*THIRD CULTURE = AND THEN GO SIT DOWN FOR 20-30 minutes by myself & have a coffee, read a book, take a bath …whatever the hell I want to do!!!<<< This is very Japanese of me, where the person who cooks sets the meal on the table and. then. walks. away. >>> I thought this was horrifically sexist as a kid, as the cook -in our house, anyway- is usually mom. Until I had kids. OMFG. The LAST thing I want to do after cooking for an army of wild childs??? Is eat. Much less eat AND referee. NO WONDER my mom was always in such a terrible mood when we sat down to dinner the moment everything was out of the oven!!! <facepalm>
Regardless of whether all my lil’helpers were standing on chairs helping me cook, or the rare times I was by myself. As my exHusband was an asshat not to be trusted with children? I could not, unfortunately, put everything on the table and leave the children with him. Instead, the kids zoomed off to do their own thing whilst mommy/auntie took 20-30 minutes to unwind… and THEN we ate!
