Tried something new today. Baked bananas. Holy sweet tooth, batman!!
I used "over ripe" bananas, sliced length wise, placed them on a shallow baking sheet covered with parchment paper (helps lessen messes greatly) then sprinkled half with cinnamon only and the other half with pumpkin pie spice and a little cinnamon, baked at 350 for approx. 20ish minutes, let them cool for bit, and wow...they taste like divine pastries you'd pay big bucks for in a cafe'. I've seen peeps roll them up to resemble cinnamon rolls, but I didn't have the patience for all that.
Next experiment will be slicing them into bite size pieces and placing a couple miniature dairy free chocolate chips on top before baking. I never bake many pastries, breads, and cakes because it has to be such an exact and very well planned science or you screw it all up. Too much pressure. lol Simplicity rocks.
