@Tornadic Thoughts Strongly recommend coconut oil for frying plantain chips! with nothing but a little sea salt absolutely gorgeous... <grin> and if you haven't had Tostones (not chips, but crispy on the outside smooshy on the inside, 1cm thick, savory twice fried plantain thingmys) dipped in fresh guacamole? You're in for a treat. :smug: <swoon> Pura Vida. I prefer straight veggie oil for these. Platanos Maduros (sweet & a bit sticky) paired with (savory) Cuban black beans and rice is another wowza one. As with all thigs dessert corn oil is fabu, but coconut oil works. All 3 the only seasoning is salt. How ripe the plantains are, & cooking method, is all that determines the difference. Green for tostones, yellow & black for chips, black for maduros,

Dang, that sounds yummy! I think you're talking about the plantain that resembles bananas. I love them, too! I was making chips out of the "weed" plantain, similar to kale chips. But I bet the coconut oil would rock with them as well. Thanks for the tips!
 
6" subway Italian BMT without the bacon but with a hefty amount of veggies including jalepeno and banana peppers... and a handful of potato chips.

Tonight is Onion rings, Mushroom & Chive Hamburgers dressed on a grill toasted roll and steamed green beans drizzled with horseradish/Greek yogurt/Sour cream sauce.
 
Dinner - picnic plate
Half a small corn beef sandwich
Potato salad with horseradish, lemon zest, spring onions and sushi Vinegar added to a little mayo - best potato salad of my tiny life
Garlic stuffed olives
Strawberries
 
Tried something new today. Baked bananas. Holy sweet tooth, batman!!

I used "over ripe" bananas, sliced length wise, placed them on a shallow baking sheet covered with parchment paper (helps lessen messes greatly) then sprinkled half with cinnamon only and the other half with pumpkin pie spice and a little cinnamon, baked at 350 for approx. 20ish minutes, let them cool for bit, and wow...they taste like divine pastries you'd pay big bucks for in a cafe'. I've seen peeps roll them up to resemble cinnamon rolls, but I didn't have the patience for all that.

Next experiment will be slicing them into bite size pieces and placing a couple miniature dairy free chocolate chips on top before baking. I never bake many pastries, breads, and cakes because it has to be such an exact and very well planned science or you screw it all up. Too much pressure. lol Simplicity rocks.
 
Spanish potatoes omelette (I did it last night), fresh chopped tomatoes with olive oil, as salad, jamón and bread from a tradicional bakery. And cherries as dessert and white coffee
 
Minnie Mouse biscuits. From Disney World. They weren't that nice but I managed to inhale 3/4 of the pack before I even noticed that I'd eaten very many.

Conscious eating. Say, what...?!

I'm realising that I only really post on this thread when I feel ashamed of what I've eaten. Sorry about that @Bearlinda because I don't think that's the purpose of your thread! Second realisation is that I've totally lost a connection with my body in terms of tuning in to when I am feeling hungry and when I am feeling full and, if I am hungry, identifying what I am hungry for. I'm going to re-read "Susie Orbach on Eating" to try to get this kind of self-awareness around food and eating back again.

And maybe then I can post an actual bloody meal that I've eaten and not just blurt out junk that I feel bad about eating!

Apologies if I am hi-jacking but my engagement with what you all post here has helped me to reach the above conclusions and now I feel determined to take some action. And I will use this thread the way it was intended and try to keep myself accountable to my conscious eating pledge while I'm about it!

Just to say your posts are most welcome here! I didn't post with any intentions of anything other than talking about what you ate or drank last. And that totally includes comfort eating or not eating enough

And I've really enjoyed reading everyone's answers too. So don't be sorry, you're not hijacking anything ;)

Seems a valuable thing if reading here has made you think about food I know it's got me thinking and wanting to try new things. But absolutely sometimes I'm gonna post 3 chocolate bars and an ice cream.

Not read that book is it good?

Not read that book is it good?

I really liked it. It's short and is really about getting more tuned in to your hunger and your body. When I first read it, it was a total revelation for me to realise that I rarely feel hungry and I pretty much never register when I'm full/when I've had enough. I generally just eat out of habit.

It's not a diet book, it doesn't ban or demonise any foods. It's really just about conscious, mindful eating.

It really clicked with me and without much great effort (just a more conscious emphasis on how I felt and how I ate) I ended up eating way less food - because I could then feel that I'd had enough - and I lost two stone without really trying.

Then I sort of fell off the wagon...hence I now want to re-read it!

Sugar is my real down fall...

And I'm considering reducing the amount of meat I eat...not going veggie/vegan...just not eating meat every day!

Anyway - yes, I thought it was a good book! :-)
