What Did You Eat And Drink Last?

Roasted boneless skinless chicken breasts rubbed with margarine and coated with crushed tortilla chips, Parmesan, garlic powder, and paprika. I thought they were meh, so slathered mine in barbecue sauce, but younger son liked without any sauce so still a win. Frozen corn cooked with butter for the side.
 
It's hard to have convenience food options when you have a limited diet. I had to go to PT and today I took a can of low sodium V-8 (which is something I often keep on hand for traveling but am not really a fan of since it's not organic or non-GMO) and some peanuts to eat on the drive home but that was not nearly enough. I need to make a better effort at having healthy things available that travel well.

I got home and had a banana and some quinoa with coconut aminos and coconut shreds. Now it's time for my after lunch coffee and chocolate -- my favorites.
 
Just looked em up. Hadn't heard of em before. Sound a bit like hobnobs :)

My great grandfather would make oatmeal cookies with coconut in the summertime, when we started singing Christmas carols. Family tradition, stemming from “the war” (there are some things I know come from WWI & some from WWII, but he was disinterested in going into details when it was just “the war”). He served wih Aussie engineers, and Christmas is in summer & oatmeal cookies have coconut in them. Full stop. Whenever he started whistling Christmas carols, you knew he’d be taking over the kitchen and baking within about a week. Drove my grandmother nuts, that he insisted on baking when it was hot out... but he made damn good cookies. So, wiki-articles aside? I suspect oatmeal & cocont cookies made it to the front. That, or the blokes just wouldn’t shut up about them. Which can also happen. Craving something you’ve never had just because someone else is publicly drooling over them for months at a time. My grandfather, then my uncle (my mom refuses, Christmas is in winter, and she thinks we’re all nuts), and now I have taken over the tradition. You just kind of grow up with it, and it feels wrong not to.
