....and in potato salad? yummm.....

LMAO.. MY mom was known for bringing *______ potato salad, topped with an entire layer of deviled eggs (on top) to potlucks around the world. It started out as a way to secure the eggs. Slippery suckers!

* The first time I was in NYC I was startled to find a “potato salad section/island” in most grocery stores. With 6-12 types of potato salad by region?!? What is this?!?

I can’t remember for the life of me which “kind” of potato salad my mom’s makes. PNW? Chicago? Amish? Shrug. I was shocked to see it in the store, I never see it in any store. To me, it’ll just be “moms potato salad”.

Spoiler: Pick your poison! Errrr…potato salad!

- Peeled Russet
- Peeled Gold
- Skin on Red

- Mayo or Miracle Whip
- No Mustard, Yellow, Brown, Dijon, Country Dijon, Whole Mustard Seed
- No Relish, Dil Relish, Sweet Relish, Quick Pickle, diced cucumber
- White/Yellow, Sweet, Red, or Green Onion
- No Egg, or Poached Egg, or Scrambled, or Chopped Hard Boiled Egg
- No herbs, fresh herbs, fines herbs, Provençal herbs, dried herbs, Italian dressing (vinaigrette marinated herbs).

+ any myriad extras = Bacon, capers, olives, peas, peppers, marinated peppers, artichoke hearts, anchovies, tuna, bonito, smoked salmon, beetroot, beefsteak leaves, fried sage, fried green tomatoes, okra, etc., etc., etc..

+ Seasoning = Salt & Pepper, Paprika or Smoked Paprika, Creole, Old Bay, Brown Sugar BBQ rub, Carolina Gold BBQ

- Served hot or cold

My mom’s is a peeled russet, mayo & yellow mustard, dill relish, white onion, with hard boiled egg… served cold. <<< Until that fateful time she used the giant bowl of potato salad to safely carry the devilled eggs on the train (back in the early 80’s) to the party. Military men, as a species, are RELENTLESS (and cheerfully oblivious!) when it comes to their food. Show up to a party without the “famous devilled egg top”!?! Don’t worry Missus! We’ll help you fix it!!! You two, go to the commissary for eggs. You, get a pot scrubbed & water boiling. You, you, & you, you’re peeling and slicing! “Fix it”,indeed!

She tried a couple few times over the years to omit the devilled egg “top”. But the thing with everyone moving all the time? Word gets around. Show up on a brand spanking new base and 2 of the blokes in the wardroom have already had the “right” one, or half a dozen have heard about it. “Don’t worry, Missus! We’ll help you fix it!!!”
