(w fauxcotta ;) Super easy diary free ricotta sub. 1 box silken-firm tofu plus a tablespoon each of sugar, kosher salt, dried basil, garlic, & 2 tablespoons of lemon juice. Stir it with a fork until it looks like ricotta & voila. Alternatively half a box of silken and half a box of firm tofu, or just double the recipe & use 1 box of each. I love this cheat. It's vegan, it's kosher, it's 5x less expensive than cheese. Also stuffs great manicotti.)

I've been ever so low and my world reduced to a small box ~ My bedroom.
Thankfully am slowly coming out of it and today thanks to a dental appointment I actually got out the house.

On the way home I popped in the local Greek bakery and got corn bread which I topped with butter and gouda. It tasted good! I thought it was the first time me having corn bread but on tasting it I think it can't have been. It was a familiar taste.

Anyhow I think it's close to being a novel experience enough to count as one as I've defiantly never bought corn bread from a Greek bakery before.
Novel experiences cheer me up.
That'll do nicely.

For breakfast earlier I had eggs & kimchi, cherry toms & houmous.
 
A handful of liquorice comforts. My mother would be horrified - "Eating sweets at 6pm?! You'll ruin your dinner!"

And, to be clear, I only had one handful because that's all there was. Otherwise, I would have been eating many, many handfuls!

I really like this thread...I am fascinated by what you all eat! Aware that I think I have only posted about sweets and chocolates. I *do* eat proper meals, I promise!
 
Have really fallen off of getting all the protein I need. Today for supper I had a chicken breast and baked potato with sour cream. The sour cream was a treat since I rarely have diary. I also have a Crock-Pot full of veges and two chicken breasts. Huge step for me.
